How to avoid Ip addresses stored

Hi, I've set up a classic quiz that allows multiple responses and retries, and I'm not interested in storing ip addresses of respondents (especially since GDPR privacy rule does not allow them to be archived), is there an easy way to do it keeping the responses stats anonymized?
I'd also modify php files, if it's possible to avoid them to be overwritten when updated...
